Good to Be Green Shake

2 kiwis, peeled and chopped
1 banana
2 cups of spinach (baby spinach works best)
1 tsp of vanilla
1 tsp of honey
1 cup of milk
1 scoop of natural flavour protein powder (optional)
water to desired texture

Add all ingredients to a blender and blend at high speed until smooth. Drink will keep up to a week in the fridge.


Kiwi Watermelon Salsa

1 cup of kiwi, diced
1/3 cup red onion or shallots, diced
1 cup of watermelon, diced
2 tbsp of cilantro
2 tbsp of chili flakes or jalapenos (or less if you can’t take the heat)
Juice from one lime.
Salt to taste.

Add all ingredients to a bowl and mix together gently. Serve immediately or within a couple of days.


Homemade Guacamole

1 avocado
2 tbsp of lime juice (or juice from 1 lime)
2 tomatoes from a can (or fresh) chopped
1/4 chopped onion
1 scoop or clove of garlic
2 sprigs of cilantro (optional)

Mash together or put into blender.  Serve with Brown Rice Crackers.

Sun Mix (Sunflower, Sun-dried Tomato Basil)

This recipe is awesome on crackers or on its own. 

1 1/2 cups of unsalted sunflower seeds
1/4 cup of tamari (it's like soya sauce)
3/4 chopped sun-dried tomatoes
juice from one lemon
a handful of chopped fresh basil
1/4 tsp of cayenne pepper

Mix cayenne pepper, lemon juice and tamari in a bowl. 
In a separate bowl, mix sunflower seeds, tomatoes, and basil.  Cover with tamari mixture and mix.  Eat within two days!

Light Waldorf Salad

This salad is great. The dressing is really a mayonnaise substitute and can be used in other places that you might use mayonnaise.

1 cup dices celery
1 cup diced crisp apples
1/2 cup coarsely chopped walnuts
1/2 cup seedless red grapes, halved.
1/2 cup low-fat, plain yogurt
1 tbsp lemon juice

DRESSING:
Replace the standard mayonnaise with yogurt mixed with lemon juice. 

Place all salad ingredients in a large serving bowl.  Toss with dressing and keep refrigerated until ready to serve.

Dairy Free Pesto

In the small cup of your magic bullet, blend the following ingredients:

A big handful of basil leaves
1/4 cup of sunflower oil
a clove (or scoop) of garlic
1/4 sunflower seeds
1/2 tsp of sea salt
1 tbsp of nutritional yeast (if you have it)

Makes an awesome pesto for crackers or pasta! 

The Colin Sandwich

Cucumber cut into quarters
Low fat baba ganoush
Billy Bee honey mustard
Low fat Havarti (or jalapeno Havarti) cheese slices
Whole wheat tortilla wraps

Spread Baba Ganoush down the middle of the tortilla.  Squirt honey mustard on top.  lay half a chees slice and top with cucumbers.  Wrap and enjoy! 

Watermelon Towers

Sliced watermelon
Sliced tomatoes
Bocconcini or feta cheese sliced
Basil
Balsamic Vinegar (optional)

Assemble watermelon, then tomato, then cheese, then basil and lastly drizzle with vinegar.
