Not So Healthy

These recipes are not always as healthy as the others, but these are some of the recipes from my childhood.  I wanted a place that I could access them online, so now you can share them, too!

Pineapple Ribs

1/4 cup white vinegar
1 large can of pineapple chunks (juice and all)
1 onion diced
1 cup of brown sugar or 1/2 cup of honey
2/3 tbsp soya sauce
2 tbsp flour or corn starch
Bunch of short or button ribs (or precut into small pieces or cut after browning)

Brown ribs in a pan in the oven under broiler (cook until brown) in roasting pan or cookie sheet.  Put into casserole dish and mix above ingredients (incl. flour) and poor over cooked ribs.  Cook at 325 for 30 minuted uncovered.

Macaroni and Cheese

2 tbsp butter
1 onion (chopped)
1 stalk of celery (chopped)
1 can of condensed cream of mushroom soup
1/2 can of milk
2 cups of grated cheddar cheese
3cups of cooked elbow macaroni (1 1/2 cups uncooked pasta)
1 regular can of tomatoes (diced)
3 tablespoons of fine, dry bread crumbs (optional)

In a sauce pan, heat butter; add onion and celery and cook until transparent.
Stir in can of soup, milk and cheese.  Stirring constantly, heat until melted. 
Blend in elbow macaroni and tomatoes. sprinkle with bread crumbs (optional).
Bake in preheated 350 oven for 30 minutes or until thoroughly heated through.

Classic Spinach Dip

1 pkg of frozen spinach
2 cups of sour cream
1 cup of Hellman's mayonnaise
1pkg or Knorrs Vegetable soup mix
1 lrg round pumpernickel bread loaf

Squeeze excess moisture from spinach. In a bowl combine spinach, sour cream mayonnaise, soup mix.   Cover and let sit in refrigerator for two hours. Hollow out bread centre, fill with dip and serve.

Nacho Dip

1/2 of a small (500ml) container of sour cream
1 pkg of cream cheese (softened)
2 tsp of taco seasoning

Mix well and spread into serving dish (casserole?).
Layer sliced lettuce, salsa or chopped tomato, shredded cheese.  Refrigerate for an hour and serve with tortilla chips.   Add a guacamole layer (optional).

Easy Eggs Benedict Sauce

1/2 cup of sour cream
1/2 cup of mayonnaise
1 egg
two big scoops of cheese whiz (2 tbsp?)

Microwave for 2-3 minutes and stir.  Put back in microwave for another 2-3 minutes and stir.  Serve over poached egg on English muffin. 

Oatmeal Chocolate Chip Cookies

1 cup of butter (softened)
3/4 cup of white sugar
3/4 cup of brown sugar
2 tsp vanilla
2 eggs
2 1/4 cups of all-purpose flour
1 tsp baking soda
1/2 tsp of salt
1 1/2 cups of chocolate chips
2 cups of quick cooking oatmeal

Preheat oven to 375.  Beat butter, sugars, vanilla and eggs until light and fluffy. Mix in flour, baking soda and salt by hand until well-blended.  Stir in chocolate chips.  Drop by heaping teaspoon onto ungreased cookie 2 inches apart.  Bake for 10-12 minutes or until lightly browned.  Makes about 5 dozen cookies. 

Poppy Seed Cake

4 eggs
Add 2 cups of sugar and beat
Add 1 cup of mazola oil and mix
Add 1 can of carnation milk (large can) and beat
Add 3 cups of all-purpose flour
Add 3 tsp baking powder
Add 1 cup of poppy seeds and beat

Bake in oven at 325 for 1 hour in large greased cake pan. 

Apple Crisp

5-6 peeled and thinly sliced apples
3/4 cup quick cooking oats
3/4 cup brown sugar
1/2 cup flour
1/4 tsp cinnamon
1/2 cup butter
1/4 tsp lemon juice

Arrange apples in greased pan.  Combine oats, sugar, cinnamon.  but in butter.  Sprinkle lemon juice over apples and sprinkle mixture over apples.  Bake at 350 for 35 to 40 minutes.  Serve warm with cream or ice cream if desired.
